EASTER TRIVIA

► The name Easter comes from Eostre, an ancient

Anglo-Saxon goddess.
► Easter falls between March 22nd and April 25th.
► Easter is now celebrated on the first Sunday after

the full moon which happens on or after March 21,

the Spring Equinox.
► Easter also refers to the fifty day season from Easter

Sunday through Pentecost.

LIGHTENED UP ITALIAN!!

Linguine with Tuna Puttanesca Serves:  4                                              Ingredients

  • Kosher salt
  • 12 ounces linguine
  • 2 tablespoons extra-virgin olive oil
  • 4 cloves garlic, thinly sliced
  • 1/4 to 1/2 teaspoon red pepper flakes
  • 2 tablespoons capers, drained
  • 1/2 cup roughly chopped kalamata olives
  • 1 28-ounce can San Marzano plum tomatoes
  • 4 basil leaves, torn, plus more for garnish
  • 1 5-ounce can albacore tuna, packed in olive oil
  • Freshly ground pepper

Directions

§  Bring a large pot of salted water to a boil. Add the linguine and cook until al dente.

§  Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook, stirring, until slightly toasted, 1 to 2 minutes. Add the capers and olives and fry 2 more minutes.

§  Crush the tomatoes into the skillet with your hands and reserve the juices. Cook until the tomatoes are slightly dry, about 2 minutes. Add the reserved tomato juices, the basil, and salt to taste and cook until the sauce thickens, 1 to 2 minutes. Add the tuna with its oil, breaking it up with a fork, and season with salt.

§  Drain the pasta, reserving 1/2 cup cooking water, and return it to the pot. Add the sauce and the reserved cooking water and toss. Season with pepper and garnish with more basil.

CAPRESE TART

SERVES: 4

Ingredients

  • 1 sheet puff pastry
  • Flour
  • Egg wash
  • 1/2 cup pesto
  • 1 tomato, sliced
  • 1/2 pound mozzarella cheese, sliced

Directions

§  Preheat oven to 400 degrees F.

§  Roll out the puff pastry dough on a lightly floured surface to form a rectangle less than 1/4-inch thick. Place on top of a cookie sheet, lined with parchment paper.

§  Brush dough with egg wash. Bake for 10 minutes.

§  Cover baked dough with pesto. Add sliced tomatoes and mozzarella on top. Bake for another 5 minutes or until cheese melts.

Fettuccine Alfredo (Lighter Version) Serves:  4 

Ingredients

  • 1 pound fresh linguine
  • 1 1/2 teaspoons cornstarch
  • 1 cup milk
  • 1 tablespoon butter
  • 1/4 cup light cream
  • 1/2 cup freshly grated Parmesan cheese

Directions

Bring a large pot of salted water to a boil. Add the pasta and cook until it is tender but still firm to the bite, about 3 minutes. In a saucepan melt butter, add milk and then whisk in cornstarch over medium heat until lightly thickened. Add pasta to the saucepan and toss. Add light cream, Parmesan cheese, salt and pepper, nutmeg to taste. Toss and thicken more. Serve immediately.

20th Annual Egg Hunt & Bonnet Contest
Saturday, April 23rd @ 12 Noon - Civic Center Park

Children of all ages are invited to hunt for treats, enter the Annual Bonnet Contest, and have their pictures taken with the Spring Bunny! Adults- don’t forget to enter the traditional “Egg Toss”!  There will be a $2 per child fee for attending the event payable from your car as you enter the park.
Bonnet Contest: 12:15PM- Children’s categories: Best Auburn Hills Spirit, Most Creative, Prettiest, and Most Patriotic.
Adult category – Spring Bunny’s Favorite
Photos: 12:15PM inside the Community Center –  $5 per photo (pay at event)
Adult Egg Toss: 1PM on the lawn

Note:  Hunt areas are spread throughout the park.

The age categories are: 3 & under, 4-6, 7-9, 10 & up

Arbor Day Celebration

Location:  Auburn Elementary/Clinton River Trail

Join fellow neighbors, City Officials, ITC and students from Auburn Elementary & Avondale High School in celebrating Arbor Day across America as we plant a symbolic tree in recognition of Arbor Day.

You will also receive valuable information on how to properly care for trees.
